I was on my way to the grocery store the other day and got a craving for M&M brownies. Not sure where that came from but I had to have them. Lemon is one of those things that I can't get enough of. For an Easter treat this year, I made these lemon cupcakes topped with a cream cheese frosting. The cream cheese frosting even has a little hint of lemon in it. These cupcakes are light and fluffy and taste great. It’s now officially spring and Easter is just around the corner. I’ve got a few spring/Easter-inspired desserts coming up over the next few days. First up are these multi-layer mini cakes. The cake itself is a tasty vanilla cake layered and topped with a smooth lemon buttercream. They’re really easy to make plus they look and taste great. One thing I make a lot is chocolate chip cookies. They're quick and easy and they always taste great. A while back I was in the grocery store and saw some frozen chocolate chip cookie cups that looked pretty damn good. They weren't traditional cookies, but looked like they were made in some kind of cupcake pan. I bought them and threw them in the oven as soon as dinner was finished. They were pretty tasty but they had a little too much molten chocolate and not enough cookie. I bought them a few more times after that, until I tried to make them at home. Really good two bite brownies should have a little bit of crunch, a little bit of chew and a lot of chocolate. I had an old recipe that was alright, but was more like a cake than a brownie. After quite a few alterations, I’ve got this recipe which is amazing, both on its own and filled with random chips or nuts.
