This colorful salad makes a great side dish and is packed with phytochemicals and antioxidants. Phytochemicals and antioxidants are natural compounds found in plants that have been shown to reduce the risk of some cancers and heart disease.

Quinoa Garden Salad
Yield: 8 servings
Serving size: 1 cup

~20 minutes prep
~1 hour chill

Ingredients
2 cups quinoa, dry
1 red bell pepper, diced
½ cup sliced cherry tomatoes
¼ cup fresh basil, minced
2 cups arugula, coarsely chopped small
¼ cup Italian dressing
1 tsp each salt, pepper, and garlic salt

Instructions
Heat a medium saucepan over high heat. Add 2 cups of water and the quinoa. Bring to a boil, then reduce the heat to low. Cover and cook for 13-15 minutes until quinoa is cooked.
Remove quinoa from heat and let stand for 5 minutes; uncover and fluff with a fork and set aside in refrigerator to cool.
In a medium mixing bowl, stir together the cooled quinoa, bell pepper, tomatoes, and arugula.
Pour the dressing over the quinoa mixture and stir together to combine.
Add garlic salt, salt and pepper.
