Happy Friday the 13th! And it's a crisp October day, my Halloween heart is overjoyed! Perfect day for Spicy Pumpkin Black Bean Soup from Vegan in the Freezer's blog. Clearly, it's the season of the pumpkin and nutrition world the pumpkin is celebrated as one of the best-known sources of beta-carotene, a powerful antioxidant. Consuming foods rich in beta-carotene may reduce the risk of developing certain types of cancer, offer protection against asthma and heart disease, and delay aging and body degeneration.
