Another stop on our culinary journey is Basque country situated between France and Spain in the western Pyrenees. Along with salted cod, tomatoes and onions, olives are a big part of their diet. While the children are with their father I make comfort food such as chicken with stuffing or meatloaf and mashed potatoes or homemade pizza but when it is just the two of us we explore! This Basque delight is a spicy fish in a tomato based sauce with olives, onions and lemon. Very healthy! Also low in fat and calories. As before anyone who would like this recipe just send me a message. Till then my wish for you is more than enough seasoning to make you happy, but just enough to keep your life interesting!

Very busy the last two weeks, but not so much that I did not get to make a few stops on our culinary journey. One of which is my particular favorite of Montenegro. This lovely country is considered the new St. Tropez! Seated between Venice and Corfu. Montenegro which is considered a respite for the super rich and famous is a bounty of leisure actives from ski slopes to pristine beaches. Ancient citadels, seaside villages , chic restaurants, boutiques, art galleries, private jet services, a yacht broker and crew services. Along with a Baccalaureate school and Olympic-sized infinity pool over the sea. This former part of Yugoslavia is known for stuffed cabbage and peppers, lamb and beautifully colored fresh vegetables! In keeping with this culinary style I made multicolored stuffed peppers with a rice, chicken,chorizo and rice stuffing. Low in fat and low in calories, but full of flavor! Along with this a glazed acorn squash and herb salad. For anyone who wants the recipe just send me a message and I will be more than happy to give you all the details. Till then my wish for you is that your life has more than enough seasoning to keep you happy,but just enough to keep life interesting!

Had a wonderful New Year's Eve & Day. Wore my special gift as promised. New Year's Day started with prayer. My hubby & I and then my annual resolutions, hopes,dreams and ideas session. Always like to try and start the new year off right! Wish blessings and the best for my facebook and Google family and family of friends for 2013! Herb chicken, greens and homemade black-eyed pea salad!

Since I would be able to visit with mom at Christmas I made Christmas dinner and froze it for the trip. Turkey, stuffing, mashed potatoes, cranberries and even a pumpkin pie. Dave & I bought her Christmas present. Packed everything up and started the drive 2 weeks before Christmas. Bought a live Christmas tree, poinsettia and stuffed a stocking with some goodies. When I got to moms she was surprised. So I helped her bring down the decorations, washed everything up and we decorated. Some Christmas shopping and dinner out. Spent 3 days and back home to finish here for Christmas. When I spoke with her on Christmas she was happy and said she felt like she had 2 Christmases. Hope I brought a little cheer.

Marching through Macy's. Macy's gives so much! They give the Macy's Thanksgiving Day parade as a gift to the world at a cost of several million. The have the Believe campaign that for every letter a child writes to Santa and mails at their store they give a dollar to the Make A Wish foundation. Love their Christmas spirit!

Today I had to finish my baking feel like it or not. Not usually like me. I do like to bake! So finishing up the chocolate chunk cookies, wedding cookies, fruitcake and cut-outs and biscotti coated with white chocolate and sprinkles. Had some taste testers on Sunday when I made oatmeal-chocolate chip. Still need to make Italian rainbow cookies, peanut butter kiss cookies, homemade candy, and coconut snowflakes. I guess tomorrow will be shipping day? May look messy but this is one tasty fruitcake!

Saturday we were able to watch the local parade with Dave's daughter in the marching band. He is such a thoughtful father! When he was set to be stationed in Norfolk he came out to check the area and picked this little town so his children would live in a safe area with good schools. Driving an extra 3 hours a day so his children would be able to live in this sweet little town even though most days this means he leaves before it is light and gets home when it is dark. He is wise enough to know his children are worth the extra travel every day!

Our culinary journey tonight weaves fabric of religion and history together with a combination of favorites such"latkes" and fish along with a new twist. Cheese Latke crusted flounder with a Cajun flare and french fried cauliflower as a side.This recipe is easily made with left over mashed potatoes.


Recipe
4-5 pieces of flounder

For coating on fish
Slightly beat
4 eggs
Then roll fish in egg mixture
then in
8-10 crushed crackers
then roll in egg mixture again

Mix the 4 ingredients
and roll fish in flour mixture
1 cup of flour
1 teaspoon of salt
1/2 teaspoon pepper
1/2 teaspoon garlic

For crust on fish
Mix all ingredients and
then cover fish in mixture
2 cups mashed potatoes
1/4 cup flour
1/2 cup cheese of your choice
1/4 cup Parmesan cheese
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Cajun seasoning
1/2 teaspoon garlic

Bake in wax paper lined pan on 350 for 35-45 minutes till Cheese Latke crust starts to brown. This recipe is delicious but just watch the roof of your mouth when eating because you will not be able to wait for this to cool down!

Served with french fried cauliflower and maple glazed parsnips with pecans and a nice side salad it makes a tummy warming dinner!
