(Recipe of the Week) We've got a clean, tasty version of chicken tortilla soup that includes the classic Mexican flavors along with a few unexpected ingredients. This soup would reheat beautifully for lunch the next day as well. We will definitely be topping ours with the suggested avocado for a cool, creamy addition. Enjoy a bowl this week!

Today's Recipe of the Week is a favorite: A whole-food version of classic chicken soup - so comforting and delicious! Make your own variations of this soup by adding a few chopped scallions, minced garlic, or diced avocado at the end. This soup reheats beautifully for a delicious lunch the next day.

"I began working out at The Exercise Coach about 3 months ago. Although I was skeptical initially as I had tried working out at various stages of my life, I decided to take the plunge and commit to their program of exercise and a healthy diet for 90 days to see if it really could make a difference. After a few short weeks I actually started feeling better, and the bonus was that I was being told by friends and family that I looked 'great'.
Last week, my day of reckoning came in the form of my annual physical. My doctor was not only surprised, he was amazed that I had lost 20 pounds of body fat.
