Dinner! Homemade chicken with rice and broccoli. One neat thing about oncall weekends is the ability to experiment with various recipes. This was my attempt to recreate rice-a-roni, which we ate quite a bit of growing up, from all whole ingredients (though I did cheat and used cartoned chicken broth). Not bad: needs some wild rice in with the white rice, though, for texture. Spicing it with cayenne pepper and some fresh minced serranos made it quite a bit spicier then the original, but that's a plus in my book. I think a little more fat, or maybe just replacing a tsp of olive oil with butter, wouldn't be amiss either.
