Bacteria in dental plaque and in sugar release acid. These acids reduces the pH of your mouth to 5.5 causing your tooth to demineralize. Once the bacteria or sugar is gone, the mineral loss recovers after 20 minutes as the pH increases back to normal. This is how cavities can occur.
