A nifty, hopefully inspirational video post today. Zak The Baker Wynwood Bakery & Cafe is located in Miami, Fla. The video shows owner Zak preparing numerous artisan breads for a day’s sales. It’s a somewhat low tech operations from the looks of it. He…

"That's a very good question" said the Christian bible school teacher who then spends the rest of his time avoiding giving any logical, direct answer to the  question, wandering around different topics and even making stuff up as he went.

We'll have to call that one a huge fail.
Or maybe not; it may well help people on the cusp to realize how nonsensical Christianity is.

This one’s simply an instructional post where we see Chef Marina Brancely making a puff dough. This video was uploaded to YouTube by Chef Ciril Hitz, who also posted the ingredients list with the video in the comments section. Unfortunately, the YouTube…

A checklist for raising chickens in the most self-sufficient, low cost, low labour way
no more cleaning chicken poop! No more feed costs! Be able to leave for a week at a time! Raising chickens is now far easier.

That was amazing and inspiring. Kudos for having the fortitude to put yourself out there like that.

I hope your future is inundated with those sunny, bright bits of grey. Fields and fields of the stuff.

The drama these religious bigot local Fox News reporters inject in the way they read their scripts is great. Stressing that this is on "Easter Sunday" (gasp!), the dramatic pause before saying "The Satanic Temple!". And of course, having to say that some residents are "RAGING!!1!111" over it.

Yeah, fair and balanced, that's it. No pandering at all here, kids.

Also, very funny: turn on the Closed Caption feature and scoot to about 1:55, where she ends her report and says her name: "In Memphis, Sasha Jones, WMC Action News." The auto-transcript got it pretty much right.

All solved! God called and postponed the Easter Sunday to the next Monday. A miracle, indeed!

Been making a small batch of Cinnies (cinnamon buns) at work every day of late. Thought I’d just pop a shot of them here along with the recipe, just because. I’ve been making these cinnies at the last two places I’ve worked and they are a hit. I’m using a recipe that can be…

Thanks for letting us go to work with you a bit, Mark. It's great to see these behind-the-scenes videos, gives a good idea of all the labour and heart that goes into your baking.

Thanks for the cool video, Mark.

I haven't tried a 100% rye bread yet. I think this will have to be my first go. I like the spritzing idea: keeps the dough from sticking without adding extra flour that would make the bread dryer and denser.

+Paul Aboud That sounds like a good adaptation, Paul.  I usually let it rest for a couple of days in the fridge before I enjoy it.

Its a decent enough grocery store with a reasonable selection of goods available. Service is good, people are friendly. However, its bloody freakin' pricey. Example: A 1L carton of Half-and-Half coffee cream here is $4 where in other stores it's mid $2 or even as low as $1.89 (Superstore, Nanaimo). 4L Milk is $5.50. The excess price isn't just in dairy, either; it's in pretty much everything. The problem, as I see it, is that they are the only game in town. There are no other grocery stores in Qualicum (no, the natural food store doesn't count) so Quality Foods has a captive audience who do not have any choice. They could hike their prices up a dollar on everything and still have about the same number of customers stuck with no other choice. If we can, we do head down to Port Alberni or Nanaimo, even Parksville (Thifty's) to find better priced grocery items. Not only do we not much care to pay so much, we don't care to give money to this company and support their overpriced practices. The day another grocery store sets up shop locally, things may improve. Until then, its emergency shopping only.
