Fill a container up with warm water. I use warm water. The reason for this is. Eggs are porous. If you put an egg in cold water, it will contra
ct and draw any bacteria that is on the outside of the shell in through the pores. This is not good. So, if you use warm water, the egg will expand, and you will notice that little air bubbles form on the shell.

Put your eggs into the warm water, and look at them. A very fresh egg will sink to the bottom and lay on it's side. Week old eggs will rest on the bottom but the fat end of the egg will rise up slightly. Three week old eggs will be balanced on pointy end with the fat end sticking up. Old eggs will be floating, bobbing along the surface of the water. These floaters should be tossed as they aren't any good to eat.

INGREDIENTS
* 1 cup Welch’s 100% Grape Juice made with Concord grapes
* 1 cup frozen or fresh blueberries
* 1 tbsp chopped fresh mint leaves
* 1 cup Cabot Vanilla Bean Lowfat Greek-Style Yogurt

PREPARATION
1. In large skillet over high heat, bring grape juice to boil and cook for 5 minutes. Add blueberries and continue cooking until reduced and bubbling thickly, about 4 minutes longer.
2. Transfer sauce to bowl, cover and refrigerate until chilled.
3. When ready to serve, stir mint into sauce. Layer yogurt and sauce in two (8-oz.) glasses.

Makes 2 servings

♥ How to Tell if Your Avocado is Ripe ♥

To determine if your Avocado is ripe, gently press on the bottom with your finger; ripe Avocados will feel slightly soft. And when shopping for and storing Avocados, use this guide (see picture):

1. Light Green -- Very firm. Ready to eat in about 5 days.
2. Medium Green -- Firm. Ready to eat in about 3 days.
3. Breaking -- Somewhat firm. Ready to eat in about 24 hours.
4. Pre-ripe -- Somewhat soft. Ready for slicing.
5. Dark ripe - Softer. Ready for all uses.

♥ Storing ripe Avocados ♥

Avocados at stages 2 – 4 can be stored at room temperature in an area with good circulation to continue their ripening. For speedier ripening, keep Avocados in a closed paper bag. To slow down ripening, refrigerate them until a few days before use.

Avocados at stages 4 – 5 can be stored in your refrigerator (36º to 40º F) for up to one week. When saving part of an Avocado for later use, cover the exposed flesh with plastic wrap to slow oxidation.

In a jar, combine lemon slices, organic honey and sliced ginger. Close jar and put it in the fridge, it will form into a "jelly". To serve: Spoon jelly into mug and pour boiling water over it.

This is a smart health move, but did you know that not all oils are created equal when it comes to nutrient absorption? Some work better than others and can actually enhance the amount of nutrients your body receives from the food you eat.

^ Coconut Oil is Superior in Enhancing Nutrient Absorption ^

A new animal study compared the effects of feeding coconut oil (a saturated fat) versus safflower oil (a polyunsaturated fat) on the absorption of carotenoids from tomatoes. Coconut oil enhanced tissue uptake of tomato carotenoids to a greater degree than safflower oil, a benefit the researchers suggested may be due to coconut oil's medium chain fatty acids (MCFAs):

"These results may have been due to the large proportion of medium chain fatty acids in coconut oil, which might have caused a shift in cholesterol flux to favor extrahepatic carotenoid tissue deposition."

Coconut oil is nature's richest source of healthy MCFAs. By contrast, most common vegetable or seed oils are comprised of long chain fatty acids (LCFAs).
