This Friday's yummy recipe:

A warm, simple dish for winter time... serve with some green salad, warm rustic bread.

Spicy Bean Stew

1 small Onion – diced
1 clove Garlic - mince or crush
1 tbsp olive oil

2 tsp Chipotle chili powder
½ tsp Cumin powder

3 cups White beans, pre cooked
3 cups diced tomatoes – you can use fresh, but canned, roasted tomatoes in juice work well and save time
Tomato juice as needed
Salt, pepper, fresh parsley chopped, chives chopped .

Options: sour cream, cheddar cheese or goat cheese crumbles

Saute the onion and garlic in oil till very fragrant and light brown color. Add the spice, and some salt and pepper, cook a few minutes while stirring. Add the beans and tomatoes. Bring to simmer and cook for about 30 minutes. Add tomato juice as needed to keep moist. Finish with salt and pepper to taste. Just before serving, stir in the fresh herbs. Serve with a touch of sour cream or cheese over each bowl.
