I recently moved into an apartment building that shares a parking lot with a huge grocery store, and I'd be lying if I said that the proximity wasn't a huge selling point. See, even though I have plenty of experience cooking, developing recipes, and publishing super organized meal plans, I still find myself in need of last-minute groceries on a regular basis—milk for coffee, greens to turn leftovers into a salad, or some dinner ingredient that I swore I bought but then can't find. The fact that I can get to the store in back in under 10 minutes makes life so much easier. (I honestly just ran over to restock my stash of black cherry seltzer. A necessity.)
I know most people aren't so lucky, and that last-minute grocery runs can put a damper on otherwise perfect weeknights. I'm also of the belief that grocery shopping is absolutely the hardest part of cooking. It's easy to whip up a quick meal when you have the right ingredients around, but anticipating what those ingredients will be days in advance isn't easy, and actually takes a fair amount of planning. You can't just throw whatever looks good into your grocery cart and hope for the best, because satisfying meals are all about the right combination of ingredients. You need a mixture of man-that-looks-delicious stuff (meat, cheese, in-season produce) and less exciting things that will complement it (canned beans, dry grains, oils, condiments, eggs, milk, etc.). Basically, you need to go in with a plan.

Dried red kidney beans may be one of your pantry staples. And why not? They're packed with protein, fiber and iron, and incorporating them into your diet can offer a bevy of health benefits, from lowering your cholesterol to reducing your risk of a heart attack. They pack a real health punch.

But it turns out that red kidney beans also have a dark side: They can be toxic—when they're not cooked correctly, that is. Research from the U.S. Food and Drug Administration shows that dried red kidney beans contain a particular lectin (a type of protein) that is toxic to people. To rid the kidney beans of this lectin, they have to be boiled for at least 10 minutes. But if you're cooking them in a slow cooker, chances are they're not reaching the required 212°F to rid the beans of their toxicity. And you could get sick from them, according to the FDA.

Phytohaemagglutinin (PHA), the lectin in red kidney beans, defends legumes against pests and other destructive pathogens. But in humans, eating as few as four beans with PHA can cause vomiting, diarrhea and gastrointestinal illness, the FDA says.

Cindy Ayers Elliott is probably not the first person to have a life-altering epiphany after hearing Michelle Obama speak. For Ayers Elliott, the aha moment came around 2010 at a conference she attended in Washington where Obama spoke about Let’s Move!, her healthy foods initiative. Ayers Elliott had been invited to hear about the farm bill’s newest efforts due to her recent job as CEO of the Delta Foundation.

Of Obama’s message, she said, “I really bought into that hook, line and sinker.” She remembered thinking, “This is the way we’ve got to make a difference to save our children from health disparities; from diabetes and hypertension.” When Ayers Elliott, who now runs Foot Print Farms in Jackson, Mississippi, started looking at statistics, she saw that her own state was not immune to America’s health crisis. “Wow, everything she’s talking about is right here,” Ayers Elliott said while speaking to us at her farm. “The problem was identified; the opportunity was given. So now what would the solution be? In this case, it had to be access to healthy foods.”

A study by researchers at the University of Surrey found that changing the time that breakfast and dinner are eaten can aid fat loss.

The 10-week study, published in the Journal of Nutritional Sciences, analysed meal times and diet intake.

To do this, they asked 16 adults to eat their breakfast 90 minutes later than usual, and dinner 90 minutes earlier than usual.

After analysing the subjects against a control group who ate their meals at the usual time, they found the fat loss of up to twice as much.
