Crunchy Mung Beans
Every street corner that you turn in Thailand, you'll find street food. Most go set up a spot, others cruise around with a tricycle or a push cart. Only a small fraction carries food on a tall table on their head. It's Crunchy Mung Bean time! One of the most addictive substances ever.

Fried Tofu
The bland tofu got a huge transformation after being fried until golden. The spicy peanut sauce dresses it up...no longer dull.

Shrimp Paste Rice ข้าวคลุกกะปิ
Some Thai dishes are heavily influenced by foreign ingredients. Shrimp Paste Rice has one imported ingredient, chili peppers. The rest are screaming Thai to the core.

Every piece of rice is covered with pungent shrimp paste. The rice mixture is seasoned with shallots, shredded green mango, lime juice and hot chili peppers. Sprinkled with fried beaten egg and fried dried shrimp. Served with sweetened pork.

Son-in-law Eggs
The boiled eggs are fried whole until the outside is puffy and golden brown. The eggs are halved and sprinkled with fried shallots and peppers.  Served with sweet and sour tamarind sauce.

Black Beans
The beans are used strictly for snacks and desserts.  I found out how soaking the beans or roasting the beans prior to cooking affect the cooking time.

A dish like Tom Yum Pork Ribs lends itself really well to warm you up in cold nights. In tropical Thailand, the heated nights are doused with a glass of whisky on the rocks and entertaining conversations with old buddies around a pot of tom yum ribs.
