This slightly spicy marinated, grilled salmon is perfect for the warming days of Spring! Grab a plate and meat us outside!

Ingredients
4-6 salmon steaks - the fresher the better!
4 minced garlic cloves
3 tablespoons olive oil
juice of 3 limes
2 tablespoons Crystal Hot Sauce
1/4 teaspoon ground cumin
salt and pepper
lime and chopped cilantro to garnish

Instructions
Add minced garlic to the olive oil, lime juice, cumin, and salt and pepper and stir. Pour into a ziplok bag and add the salmon. Be sure to gently get the marinade all over the steaks. Preheat the grill and cook over medium heat until cooked through. To serve garnish with lime wedges and chopped cilantro if desired.

Crystallized Chicken and Corn Chowder

1 cup bacon, finely diced
1 cup celery, diced
1 cup onion, diced
1/2 red pepper, diced
1/2 cup flour
3 cups chicken broth, heated
2 cups chicken breast, cooked and diced
2 cans corn, drained, 15 1/4 ounces each
2 tablespoons Crystal Hot Sauce
1/2 tablespoon Crystal Worcestershire sauce
1/2 tablespoon thyme
1/4 teaspoon white pepper
1/4 cup whole milk
Chopped sprig of cilantro
Sliced lime


1 - Prpepare bacon until 1/2 way done. Add onion, celery and red pepper and cook 5 minutes or until onion is clear.
2 - Stir in flour and reduce hear for 4 minutes stirring frequently.
3 - Stir in chicken broth.
4 - Combine chicken, corn, Crystal Hot Sauce, Crystal Worcestershire Sauce, thyme, and white pepper.
5 - Bring to a boil and cook for 30 minutes or until the thickened.
6 - Remove from heat and add milk before serving with tortilla chips, cilantro, and lime slices.
