All purpose super cheap soup recipe
People have been asking me for the recipes I gave to the lady at the supermarket. This is one of them. You can vary it in hundreds of ways using what you have. For today, mine has onion, turnip, potato, rutabaga, carrot, garlic, salt, and 2 bay leaves in it. This is one of my all time favorite soups. Especially in Fall and Winter.

BASE
Put any or all of the following into a pot of water (diced)
onion
turnip
potato
sweet potato
rutabaga
carrots
celery
tomato
beets
radish
cabbage

Cooking on simmer until soft.

Next - add 1 protein
Spinach
peanuts (not kidding. or peanut butter)
some kind of meat (I know, you wouldn't have thought of that one)
beans (already soaked overnight to soften)
soy beans
lentil
chickpeas
peas
miso
seaweed (I'm serious)

Optional fillers can be added like rice or pasta noodles

Flavoring - optional, can add one or more
Bay leaves or any food herb
garlic
salt
bullion cubes (go easy)

Let simmer until done. You can eat it straight up. Put it in a blender for a thick, creamy soup. Use leftovers to make a casserole. Whatever. One huge pot makes enough to feed a family for several days. Or you can divide it in half and freeze it for other days. Mix it up. Change what you throw into the pot.
