ROAST CHICKEN "CAESAR" PANZANELLA
Dinner was this Roast Chicken "Caesar" (in quotes because the dressing isn't exactly a proper Caesar dressing - lemony and lighter) Panzanella with pan-toasted Rosemary Asiago Focaccia.
Washed down with our go-to cheapest of cheap (as in two dollars) white wines- Big Kahuna Crisp White (available at Fresh & Easy), which is slightly inconsistent, but mostly surprisingly drinkable. :)
I love how panzanella
can be a satisfying meal in a bowl with the addition of a little roast chicken. And you could always use one of those Costco roast chickens if you're pinched for time.
