The chef-owner of Gaggan restaurant in Bangkok spoke about how Asia’s gastronomy scene is catching up with the rest of the world at #50BestTalks: Voices for Change, presented by Miele.

When he left his home country of India 10 years ago to move to Bangkok, chef Gaggan Anand says there was no fine dining scene in Thailand. Now, as his restaurant has topped the Asia’s 50 Best Restaurants list for four years in a row, he says the region’s gastronomic industry has only just started – but instead of simply replicating what has been done in Europe, cooks must adapt to Asian culture and palates to find true success.

In a city best known for its Botanical Gardens and as a major manufacturing hub, chef Manoella ‘Manu’ Buffara has been making waves in gastronomy, creating an alternative reason, other than business, to visit Curitiba. Since opening Manu in 2011, she has built an entire community of loyal producers and has invested as much energy into developing the neighbourhood as her own restaurant.
