Hi Angela, my family has gone vegan recently and there is all this talk of having to take B12 and Omega 3 to supplement for the dietary change. What are your thoughts? Also, my son is 11 and I'm running out of lunch ideas that are quick and tasty. I've done the chick pea salad sandwich but he wasn't too thrilled about it like I was. Your insight is appreciated.

The ultimate bowl of winter comfort food! Yukon Gold potatoes and green beans are roasted until golden and then tossed with warm rainbow quinoa, shredded kale, green onion, and a quick red wine vinaigrette. I topped it with crunchy pepita seeds and sliced avocado. Feel free to change up the potatoes with what you have on hand. Instead of quinoa, speltberries or millet might work nicely too.

A delicious, creamy vegan Caesar salad that will please a crowd! The dressing recipe easily doubles for a larger group. Feel free to skip the roasted chickpea croutons and simply use your own croutons, or you can use the gluten-free Nutty Herb Croutons in The Oh She Glows Cookbook (page 296). This is a side dish you're going to want on the holiday dinner table! I recommend serving this casserole with a pat of vegan butter or coconut oil to really take it over the top. Also try serving it with coconut whipped cream for a decadent twist. In this recipe, I swapped out half the vegan butter for virgin coconut oil to add some heart-healthy fats while still retaining that lovely butter flavour. One of my all-time favourite ways to enjoy Yukon Gold potatoes! Smashed, crispy, and served with an addictive - yet healthy - avocado garlic aioli sauce. These smashed potatoes make a killer side dish. Eric and I managed to polish these off all on our own, so I suggest doubling the batch (and sauce) if feeding for a group. If you have leftovers you can reheat the potatoes in the oven until warmed throughout. Smashed potatoes inspired by Leaf.

This easy, flavorful curry is a great one to whip up during the workweek, and leftovers only get better the next day. This Raw Chocolate Pudding is a scrumptious, no-sugar-added Valentine's Day treat whipped up in 5 minutes flat! {And by V-Day treat, I mean yesterday and today's breakfast. Don't judge.} I topped it with coconut whipped cream, toasted hazelnuts, pomegranate arils, and raspberry chia seed jam. I die.

This raw, completely natural, no-sugar-added banana cacao almond butter pudding will make your heart skip a beat! It won't give you a sugar crash either. I expect that kids will love this recipe too. If you don't have raw cacao powder you can try using unsweetened cocoa powder, although you will likely have to adjust the amount to taste. My favourite bowl of hot oatmeal, ready in less than 5 minutes! Soaking the oatmeal mixture overnight cuts down the cook time the morning of - all you have to do is heat it on the stove for a minute or two. Don't forget to mix the ingredients the night before. For a fall twist, add a pinch of cinnamon, ground ginger, and allspice on top of each bowl. Total fall comfort food!

Reminiscent of a Nutri-Grain bar, this version is vegan, gluten-free, and made with a homemade raspberry chia seed jam. These squares require a good period of cooling before they are ready to slice - otherwise they are very delicate and may crumble a bit.
