i can't believe they don't use some sort of algorithm to find the words for these. according to a link to this over at Boing Boing, williams was on the jimmy fallon show and asked, and fallon said that they do it by hand, reading transcripts for words and then pulling up the video bits and stitching. SO TEDIOUS.

Doing four different loaves from two different starters. Two are from a wheat/rye starter and two are with a white flour starter. I am also experimenting with my Sansaire to keep the dough on two loaves a cosy 27c during the bulk fermentation. The four loaves will a seeded loaf, an olive loaf, a wheat loaf and a cheese loaf. I will let you know tomorrow how they turn out.

I also tried with a normal water bath, but after 8 hours the temperature went down to 22ºC, even if I used a cover. So far using the sansaire I had the best results.

No problem with the photo, but the problem with the blurring feature is that the effect is obviously fake.

If you look at the pot, the back is almost completely in focus (and that is middle distance).

Then the bottle top part (which is closer and about similar distance to the food in the pot) is blurred... that could be if I make a mistake measuring the distance... but look at the knife... it's sharper than the pot front and the white cutting board right besides...

That goes against normal physics of a photo lens... I call that "cheap photoshopping" ;-)

For those Good Eats fans out there who miss the food science show, +Alton Brown has a YouTube channel with short videos done in the Good Eats style.  Only two videos so far, but short, informative and entertaining.

Now if he would just stop doing food game shows (not worth watching) and concentrate on more food science videos.

Interesting research on the changing american population, especially the Millenials.

Demographic transformations are dramas in slow motion. America is in the midst of two right now. Our population is becoming majority non-white at the same time a record share is going gray.

We stopped in for Sunday breakfast. I really enjoyed my meatloaf biscuit sandwich topped with a sweet tomato jam. Others in our group enjoyed the short rib hash. We all shared the donut holes with chocolate dipping sauce, and found them just sweet enough. Portions were large, so plan accordingly. It was a nice alternative to multitude of alternatives offering standard Danish fare in this city.

We stopped here on a Friday afternoon after doing some wine tasting. I had their classic Viking Burger and it was well prepared. The best was they had beer to go with their burgers. For a quick decent burger and beer, it was a nice place.

Ownership mixture has changed and there is a new chef. While the food still is very well prepared, they seem to moving from a friendly up scale local spot to a more high end style restaurant. We still visit regularly, but it just isn't the same personable space it has been in the past.

I have only been her for breakfast, but I have been here multiple times. When staying in Paso Robles to visit wineries, we always find time to have one breakfast here. The french style egg sandwich is always my favorite, but the spanish torta was very good, especially served with their small but tasty salsa bar.

A great small winery with dry versions of many Rhone varietals. Larry, the winemaker and owner, runs a great shop and the wines pair easily with food.

My wife and I took my son and his fiancee out for his birthday to Raphael on a Saturday night. I had reservations and we arrived slightly early and they directed to have a drink in the bar area. the craft cocktails were fun and tasty. After our drinks, we were directed to our table and enjoyed a wonderful evening of small plate items. There wine list was well suited to their food and reasonably priced. The waiter quickly figured out we knew our wines and sent the GM over to help us with our selection. Both bottles were well matched with the variety of food coming from the kitchen. The menu changes regularly/seasonally, but we really enjoyed the chicken, skate cheeks and the albacore tartare. 9 dishes in total and none disappointed. We were allowed to linger and enjoy our 3 hour birthday celebration.

Great creative food in a fun location in downtown Paso Robles. Start with the fondue and finish with the cookies. the small plates and entrees will also not disappoint.
