For an immune system boost, try out this tasty chickpea salad recipe!

Not only are chickpeas, or garbanzo beans, a great source of protein and fiber, but they also contain beneficial vitamins and minerals. The manganese and folate in these beans help to improve bone health and cell growth as well as promote healing. Folate has even been known to help prevent cancer. Add some flavor and nutrients to any meal with this chickpea salad that serves four.


1 cup couscous
1/4 cup pomegranate kernels
1 1/4 cups vegetable stock
3 Tbs. extra virgin olive oil
2 Tbs. lemon juice
1 clove garlic, minced
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground ginger
1 tsp. salt
1/2 red bell pepper, diced
1/4 red onion, finely diced
1 cup canned chickpeas, rinsed and drained
2 Tbs. finely chopped flat-leaf parsley


1. Boil the vegetable stock in a pot.

2. Place the couscous in a bowl and pour the boiling stock over it. Cover to steam for five minutes.

3. Mix the oil, lemon juice, minced garlic, and spices in a separate bowl.

4. When the couscous is al dente, fluff with a fork to separate the grains and stir in the red pepper, onion, chickpeas, and parsley.

5. Pour dressing onto the grain and beans mixture and toss until well mixed.

6. Add pomegranate kernels as garnish and serve! Serves 4.
