ne of our top ten tips to help save the planet is to forage for your food. Foraged food is not only bang on trend with food fashionistas it is also good for the environment. 
Blackberries foraged from hedgerows in the autumn have much less of a carbon footprint than their cultivated cousins (and more flavour) as does elderflower cordial made from elder flowers in the early summer. 
We have two versions of a recipe for elderflower cordial which we hope you will try.
Our first recipe comes from 'Mrs Beeton's Pantry' published by Ward Lock.
900grams sugar
30 grams citric acid
1 lemon
10 flower heads washed and drained
Clean empty bottles for sotrage.
Put sugar into a large heatproof bowl. Add 600ml of boiling water and stir until all the sugar has dissolved. Gentle heating may help but Do Not boil. Stir in the citric acid.
Grate the lemon rind (not the white pith) and addthe rind and sliced lemon to the bowl with the flower heads.
Cover and allow to stand for 12 hours or overnight.
Strain through muslin. Bottle and store for one month before drinking. Makes about 600ml.
Andy's mum's recipe is made in much the same way but with a few small changes in the ingredients.
25 flower heads unwashed as this tends to lose the florets.
3 pints of water
1 orange
1 lemon 1300grams sugar
50 grams citric acid
Make as above, but stand over 48 hours then strain and bottle.

Here at Hen and Hammock We have too many shrubs that have outgrown their spaces, and the only solution now is major surgery.

It will be good for the shrubs, but it won’t be so good for our garden waste which will be overflowing.

With that in mind we have put a few tips together on how to deal with your garden waste after a big pruning session.

It’s that time of year when some of our shrubs need hefty pruning!

Pruning Tip: Remove large stems with a pruning saw, and dry for kindling or firewood. Eucalyptus in a fire bowl or frontier stove is a real treat!
