You can use whatever spring vegetables you have on hand - leeks, spring onions, beets, parsnips, carrots, fennel etc. This dish is perfect for a nice #MeatlessMonday meal.

Wonderful time was had by all at the Full Circle Farm Member Day on Saturday, March 25! This is the 7th rainiest March in the Pacific Northwest so the fields were a bit "moist". Good thing everyone here has mud boots! The owner, Wendy, lead the tour providing the history of the farm and explaining how they've learned to optimize the growing season in western Washington. We sat on FOUR different tractors, inserted seeds into flats, enjoyed the warmth of the greenhouse where seedlings were starting to pop, picked FRESH leeks and kale, and even had time for a snack break. Everyone enjoyed learning where their fresh organic produce is from and making lots of new friends of all ages! If you missed this event stay tuned as there will be many more between now and October! Many thanks to Wendy and Andrew our farm owners! #freshorganicproduce #fullcirclefarm
