I was excited to find gluten-free tortillas at the market recently. Now I
have something to wrap my chicken salad in (which, of course, I make with
avocado in lieu of mayo) :)
And Rich has decided he LOVES brown rice. Would you believe he's never
eaten it before? I think he's almost happy I'm gluten sensitive so he can
discover new things. LOL!
My only challenge with this way of eating is that I'm also lactose
intolerant so that creates some restrictions/substitutions with certain
