April is National Garlic Month (not that we need an excuse to eat garlic)! Roasting garlic softens and sweetens its flavor, and this easy recipe makes a delicious spread: Cut a 1/2-inch off the top of a large garlic bulb to expose the cloves, then place the bulb, cut side up, in a small baking dish. Drizzle a teaspoon of olive oil over the top of the exposed cloves, sprinkle with coarse salt and pepper, and cover the baking dish tightly with foil. Bake at 400 degrees F for about 45 minutes. Squeeze the softened cloves out of the garlic skin, mash until smooth, and spread onto slices of fresh baguette. Enjoy!
