Before farm-to-table was a trend, it was the only way. Watch Jessica Sanchez learn how to milk a cow, make cheese and do things the old-fashioned way.

Before it was a trend it's how many of us grew up. I had to milk cows before school and churning butter wasn't real fun either when you are in grade school. Of course we were looked down on as farmers then and ridiculed by our friends because we worked in the field during summer. It was canning and preparing for the winter months. Now that they make such a big deal out of it, I really have to laugh. Still gardening and growing my own crops all these years later and now I guess I am finally the cool one at retirement age...lol..

Foodways is the intersection of culture, history, and tradition in food. For Jessica's first lesson, our host heads to cajun country in Rayne Louisiana to learn more about the origins of cajun cuisine with Chef Isaac Toups, owner of Toups Meatery in New Orleans. Chef Toups, a recent Top Chef contestant, is focused on offering what he calls contemporary cajun at his restaurant, but at home, the chef is all about traditional cajun favorites such as gumbo, crab boils, and wild game. But food is only part of the cajun lifesyle as Jessica learns.
