This is one of those “why didn’t I think of that?” kinds of recipes. I whipped it up on a whim based on a similar recipe. However, it was one of those rare experiences when BOTH of my children ask for seconds. And I can barely get my daughter to eat meat, let alone ask for seconds!

For a lighter take on pasta, try this whole grain pasta dish with roasted tomatoes, chicken and mozzarella.

I am completely and utterly smitten. It is everything that I want in a meal, and then some. And those chicken satay skewers? Oh. Em. Gee. Serve those bad boys with anything--a bed of steamed rice, quinoa, or just devoured straight off the pan--and you will make everyone at your table happier human beings. Just look at all that caramelized goodness.

I am longing for tropical flavors, pineapple and coconut with cream cheese added for extra creamy rolls!

Yep, this pie is truly tasty. Though there are no eggs in it, it sets up like a dream and is extremely smooth and velvety. The highlight for me, of course, is the sprinkling of cinnamon.

This casserole is soul satisfying in the way only a massive pan of cheesy pasta can be. It is especially delicious when combined with a hunk of crusty bread, some mixed greens dressed in lemon and olive oil, and a gaggle of your closest friends/family. Make it tonight--I promise it won't disappoint!
