Just had an "aha" moment! I didn't want to use the milk frother because it was looking a bit dodgy - thought I'd have a go with some baking soda, and it worked a treat!!!

Teaching Chef Maynard's cousin to smoke his own bacon, this is the belly we've been curing in maple syrup, brown sugar, salt & freshly ground black pepper (lots of) for 15 days. Was smoked for 4½ hrs this afternoon, leaving it to chill now after being brushed with another generous layer of maple syrup and will slice tomorrow. It is a long time smoking but the sweetness of the maple and the brown sugar in the curing mixture balances out with the bitterness of the smoking.
