I am sure some of you have wondered how to stay on track with Keto in Summertime.

All those tomatoes and zucchini, those giant watermelons, those ripe peaches and nectarines....Then the parties, the BBQs, the ice cream socials!

Seems like you could never succeed with your Keto plan in such a mine filed of temptations.

Summer is actually a great tie for Keto, like any other time, but we can use some little strategies to make staying on track even easier.

How about a cold or frozen chcolaty, peanut butter snack?
How about one that is also low carb and dairy free?
Try these "bullwinkles": chocolate covered coconut peanut butter mousse! 
Can'r get yummier than this!
PS you can also just make the peanut butter mousse and enjoy that  as it is!

As someone who has hypothyroidism (Hashimoto's) possibly caused by my low-calorie dieting many years ago, I can confirm that low-carb / paleo diet has not made my condition worse. It has actually done the opposite and my thyroid function has improved. I'm still on meds but feel better and my antibodies went down. 

However, not diet plan fits all and not everybody can follow a very low-carb diet. Even Dr Volek and Dr Phinney noted that there is not enough evidence that a very low-carb diet (such as less than 20 g net carbs) is beneficial for those with preexisting thyroid or adrenal conditions. Because this is my own case, I personally don't follow a very low-carb diet. My "ideal" level is somewhere at 30-50 g net carbs (light ketosis). By "ideal" I mean a level at which I feel great and maintain a healthy weight. I sometimes eat less carbs but that's just because I'm used to this way of eating but I don't force myself to follow a VLC. As Jimmy noted, there is no diet plan that fits all and not everyone can follow a VLC - you need to try it yourself and find your "ideal" carb intake.

Introduction

Hi! This is me, Vivica. I will share my food journey with you.

I was born in Italy, at a time when small grocery stores still existed. I grew up buying veggies at the "verduriere" and meat at the "macellaio".  For the first 6 years of my life my parents had a restaurant and hotel in a small resort in the mountains of Northern Italy. There I spent a lot of time playing in the kitchen, and in the pantries. I visited herds of cows out on pasture and drank fresh milk, and ate cheese made over a wood fire.

Those memories shaped my future taste and understanding of food in a deep manner.

I left Italy at 19. Lived in Germany for 5 years then in Spain.

I moved to California in the early nineties, and decided to become a photographer, a food photographer! Working for national and local magazines gave me the chance to visit (and try) many amazing restaurants. I ate and photographed my way around Los Angeles.

Then for 10 years I lived between LA and Brasil, changed career, opened a new business. But in the meantime I was always around food, helping my chef friends with catering jobs, cooking, taking pictures.

In 2009 I moved to Northern California with my husband, cats and dog.

This has been the move that close the circle. I am back in the landscape of my childhood, mountains and pine trees!

For the last 3 years I have been realizing an old dream of living self-sufficiency. Growing my own food, being connected to Nature and the Earth.

My passion for food and the desire to help others has also found its ultimate calling: Nutrition. I am now certified as a Technician in Whole Food Nutrition. I intern/work with Dr. Deborah Penner at Chico Creek Wellness and study for my Clinician certification.
