Union Republic has made steady progress since its inception. They had a very rocky start with their service and consistency with food. The kitchen has always been capable though and I think I can safely recommend them without hesitation. Dynamic plates of delicious food, but not fussy. Scotch egg, nose to tail ramen, octopus salad, chicken livers are all great. Have heard their steaks are very high quality. The new bar area is a welcome addition. They are aiming for a very high standard in their cocktails and it shows. This isn't the type of place to order a Jack and Coke.

Cool place. Not too pricey but i wouldn't say cheap either. Had a scotch egg for the first time, phenomenal.

BRUNCH, BYOB AND RAMEN?!!! Pphhhhhhfft! You have won me over. My girl and I came here today and had a great time!! If I only knew it was BYOB earlier we would of popped a couple of bottles of champagne and chilled here all day. My girl had the huevos rancheros. The flavor was on point!! I had the bacon and egg mazemen. Uni butter?! Who woulda thunk?! The flavors of the bacon and the uni butter married each other in the mazemen and created umami heaven. Now only if the eggs were POACHED instead of soft boiled I would of died and straight up went to heaven. Can anyone say CARBONARA?! Being traditionally Japanese I can tell you I am luvin' this new concept these guys are putting on. GAME CHANGER and the price is worth it for a new building in Jersey City. Hey everyones gotta pay rent RIGHT?! I didn't find any MSG ingredients at UR where if I went to Mitsuwa or Ippudo that's where all the taste would come from. Cheap ingredients in your typical ramen restaurant and definitely not thought out there to produce mass quantities! This restaurant actually cares and the servers actually check on us and see how we are enjoying our meals. Thats customer service right there! Oh yeah and they have local things they use in the kitchen for sale?! Im coming back soon and we are doing some grocery shopping for our new home we just purchased. They have a live butcher now added from Mezbah Meats. We stopped in and loved the meat case they displayed in front of the kitchen. The cuts were thick and prices were so reasonable especially for LOCAL meats! We definitely need more Union Republic around in JC!

Love the delicious ramen, such friendly and cool staff, and nice environment. More places like this needed in JC and I'll go more regularly when we finally get a bike scheme. Need to go and check out the new bar and cocktails that they spin.

I've only been here twice. The staff is attentive and actually nice, the food is tasty and the bathroom is clean. I got an egg rawer than well cooked, but they apologized and got a dessert for free. Was not expected but much appreciated.

Innovative food executed deliciously. I had the Marrow to start and was blown away by the presentation. I followed it up with the Nose to tail and the broth was mild but flavorful and the different textures played with each other well. I ended my meal with the Bread pudding, which was a well deserved chocolate overload. I am so excited to see such great food make it's way to Jersey City.

I finally dined at Union Public earlier this evening, and as I excited as I was to eat there, I left very disappointed. It may have just been a bad experience, but it will honestly be my last. For starters, as my friend and I walked in we were left unnoticed at the door for about 10 minutes, not sure whether we were to seat ourselves or wait for a host. Multiple waiters walked by and not a single, "hello." So, I walked up to a waiter and asked if we were to seat ourselves and he said, "no, there's a wait." I looked around and there were only 7 tables occupied with about 3-4 waiters catering the tables. Fast forward a bit, my friend and I ordered the lamb chops and the iron steak, only to be told they were not available. So we asked for a recommendation and what seemed to be a good one turned out to be, well, not worth it; to top it off the waiter failed to be fully knowledgeable about their "special" **$55** porter house. Ordered (with a salad)! In addition, I requested the steak to be cooked rare. Almost 35 minutes later the salad was no where to be found. After a while of looking around with puzzled faces, we came to learn that the waiter forgot to place the order. After realizing, he quickly informed the cook, who, as we watched, whipped it up on the spot. Fast forward, after an hour since ordering, the steak arrives. As I assumed, from the poor service and lack of attention, the steak was cooked well done (it was dry and salty). After informing the waiter he simply said, "sorry about that" and quickly disappeared. And sadly, there didn't even seem to be a manager on the floor. Overall, not only was the food disappointing, the experience was disheartening. 7 occupied tables with multiple servers and to receive such poor service just did not make any sense. Well, there's my two cents. If you read this review, my advice is to be smart and have some caution, and I hope you don't have the same experience as we did.
