I've been loving watching all these Peruvian recipes by Tastemade. I'm from Ecuador but there are many flavors and styles that overlap in our cuisines. I'd love to see a recipe for Aji de Gallina! Back in college, I had a Peruvian classmate who made THE BEST Aji de Gallina ever! The background music is actually an Ecuadorian folklore dance song called Ñuca Llacta. (http://youtu.be/5z74SiooeTk).

My most recent Ecuadorian stew recipe - Seco de Borrego, also known as Ecuadorian lamb stew. For this version, I used a crock pot and it turned out fantastic! Let the crock pot do its thing and walk away!
Another traditional Ecuadorian stew; this one is made with lamb meat and using a crockpot!

Hola amigos! I had forgotten to share my most recent concoction, inspired by the ubiquitous Cuban Rabo Encendido. I named my dish Refrito-stewed Oxtail with Grits. Because I live in Georgia now, y'all and I am in love with grits! Buen provecho!
This decadent and rich refrito-stewed oxtail recipe will make you fall in love with oxtail. Cooked low and slow for a few hours, will result in meat falling off the bone and tender. Served over refrit...

A cross between empanada dough and pie crust, these rosquitas or butter tea biscuits shaped like wreaths will satisfy that 4 o'clock hunger.

Grocery shopping on an empty stomach is never a good thing... Unless this is the outcome of hunger: Butternut Squash and Turkey Lasagna. If the acidity of the tomatoes in the marinara sauce keeps you from enjoying a lasagna, give this one a try!
A sweet and delicious lasagna, where the butternut squash sauce is the star. If the acidity of the tomatoes doesn't settle well with you, try this lasagna instead.

Has anyone tried Michelob Ultra Light Cider?  I had the chance to taste this new drink, and it was actually pretty good!  Definitely refreshing - it is HAWT in Georgia these days.  This light cider has a hint of green apple, which makes me want to try to make some green apple margaritas using it.  Read more about it here.

T's Tasty Bits is a food and cooking blog dedicated to Ecuadorian and Latin American cuisine. I make and recreate the delicious meals I used to eat growing up in Ecuador. Each recipe contains a step-by-step pictorial guide plus a printable recipe.
