Quinoa with a Corn and Black Bean Salsa

The salsa is quick and easy to make....use canned tomatoes and a food processor.  Then mix it with quinoa.  It doesn't get much easier than that and it's really tasty.  (Credit to Corner Bakery, it's actually their idea)

Making pizzas with Whole Wheat Tortillas is actually pretty good and only takes 8 minutes at 425 degrees.  This is one of our favorite kid friendly recipes that's also easy to make.

You probably wouldn't normally put corn, carrots and cashews together.... But when you do, they make an excellent bowl of corn chowder.  

And who knew that you could pressure cook corn cobs and husks to make a corn stock that serves as the soup base?

The time needed to cook, shoot, edit, write and post is far and few between with 2 kids.  I thought getting out 1 or 2 posts a month would be doable....but even that's aggressive.  

So here's something new now that spring may have finally arrived, a Farro Salad with Artichokes and Sun-Dried Tomatoes.  For a little twist, I cooked the farro with beer...and in actually turned out to be pretty tasty.

Very nice recipe; but personally, I would add more heat in a peppery type spice .. chipotle sweet-like flavor.

Improving Writing Skills  - 
 
Writing a decent post about a recipe is always an uphill challenge. I may have 10-20 draft posts, with photos, queued up and lacking the content.

Which is why I found this to be a great roundup of writing tips. I especially liked the idea of pouring everything into a long draft and leaving it alone for several days.

Hope this helps others, like myself, that didn't come from a writing background...

great tips, thanks! I too have over a dozen draft posts just sitting there because of lackluster content. I like the last tip, just keep writing. I keep a little notepad in my bag to take notes whenever inspiration strikes.

The traditional Tortilla Española - a simple preparation of eggs, onion and potatoes.  The key here is the classic method of cooking the onions and potatoes slowly in olive oil until each potato is almost fall-apart tender and the onions have just about dissolved.  

It takes a bit of time to do, but for the 8+ servings you'll get out of it, it's well worth it.
