Wow, I do love me a Tuna Melt!  How strange that I've never ever considered doing it as a batter and fried sammich!  Well Done!

Easy ways with Swai - the better sustainable fish
Powered by Cincopa Being a child of the 60's had it's advantages as far as television was concerned. There were only three channels to choose from, two of the stations signed off with the National Anthem as soon as the eleven o'clock news finished, and on Sundays (when there wasn't demolition ...

So.. peaches. I never really had a nickname growing up. I don't know why. I guess my own name was odd enough for the times. I tried calling myself Steve (my middle name) for a while but it never stuck. In the mirror I just didn't look like a Steve, I didn't feel like a Steve... and I ended up ...

I popped in to one the numerous curb farm markets the other day on a mission. My dwarf long pod okra plants are disappointing - as in puny, sickly little plants - and in my head I figured farm market = farmer. I mean, I can grow okra. And over the past four years I've become fairly adept at ...

Some days you just don't want to work all that hard for a meal.
No, you really can't call me a connoisseur of that flat meat pie. I typically go with the old adage - Pizza is like sex... even when it's bad, it's still pretty good. My oldest, fondest, memory of pizza was getting a take-out box ("Warning! pizza from Geno's can be habit forming") from Geno's ...

I tend to go for the gender/bender kind of flavor combinations when it comes to dessert. I don't know about the rest of you... but ice cream with bacon, or pancetta brittle sounds pretty damned good to me. I like the play of savory against something bracingly sweet.... Nothing really finishes a ...

We dun need no stinking take-out.
So, I used to go to this little hole-in-the-wall Chinese place. It was partly because of the "other" menu, as they did serve some pretty non - standard fare... or at least they did when "the usual suspect" was dining with me. I had my first Shark Fin Soup there, my first 1000 year old egg, ...

Inevitably, in dealing with local farm markets there's going to be a couple of repeats in what's available every season and what I choose to buy. Occasionally, something new pops up... like the parsnips. But more times than not, it's the same actors in the play every season.

anyone...anyone... Bueller?
See this? This is a BLUE lace cap hydrangea. I know it's blue because it was probably the first thing I planted 5 years ago when I started landscaping the property here at Turtle Creek. Every year it's grown larger, fledged out a little more, and rewarded us with a cacophony of lazy soft blue ...

I cook stuff.... I'm a kitchen tool.
Introduction
I am..
  • a hopeless foodie
  • a Restaurant Consultant
  • a Kitchen Designer and Remodeler
  • a Part-time Landscaper
  • an Occasional Caterer
  • a lazy author (or, so my ex-editor says)
  • Seriously under-employed

I believe...
  • that everyone can cook - given the right tools and opportunity
  • that you should (occasionally, at least) eat outside your comfort zone
  • that some chefs spend way too much time decorating the plate and not enough time cooking
  • that there are more gems in your grandmother's recipe box than you realize
  • that everyone has one good recipe..and one cheap novel in them
  • that there is never a good reason to buy prepackaged , pre-cooked food
  • that fast food is the bane of our culture and will be our eventual undoing
I have...
  • eaten things that would probably have been better off  in the trash
  • bungee jumped before it was even considered marginally safe
  • lost the majority of my closest friends before I reached 30
  • thought..really, truly thought.. I would be dead by 30
  • sheared sheep for fun - castrated three of them for dinner
  • traveled fairly extensively
  • three novels in varying stages of incompleteness
  • been crushed by a grand piano. (The piano was undamaged)
  • been bitten by a chimpanzee
  • spend most of my adult life working in the food industry
  • spent an entire night fishing for squid off the coast in Thailand
  • been the guest of honor at a dinner for reasons I am still unsure of.
  • had my luggage confiscated for drugs due to a poorly trained beagle (there were no drugs)
  • a thing about deli meat in general ...  mortadella, specifically
Education
  • Georgia State University
    1980
