You need ~1L pureed fresh raspberry juice (I used a juicer which removed the seeds), 3 small limes (Peeled and juiced), several sprigs fresh mint leaves, 6 egg whites whipped to form peaks, 1 cup hot water, 1 tablespoon gelatine and 1/2 cup sugar.
Add mint leaves, lime rinds and sugar to the water and bring it to the boil for a few minutes. Dissolve the gelatine in the hot water. Add this to the combined juices. Place the mixture in the freezer till it just starts to set. Fold in the egg whites. Replace the mixture in the freezer. Beat the mixture a few times, while it is freezing.
