Winter 2016: My greatest pleasure of the day is a morning walk with Graham and Rusty. Rusty nearly wags her hips off with excitement with the mention of Rusty! Come for a walk! If you have a dog you'll recognise this enthusiasm. We head off down our front r...

Day of the Flood

What do you do with excess raspberries in the orchard? Make tangy refreshing raspberry-lime sorbet!

You need ~1L pureed fresh raspberry juice (I used a juicer which removed the seeds), 3 small limes (Peeled and juiced), several sprigs fresh mint leaves, 6 egg whites whipped to form peaks, 1 cup hot water, 1 tablespoon gelatine and 1/2 cup sugar.

Add mint leaves, lime rinds and sugar to the water and bring it to the boil for a few minutes. Dissolve the gelatine in the hot water. Add this to the combined juices. Place the mixture in the freezer till it just starts to set. Fold in the egg whites. Replace the mixture in the freezer. Beat the mixture a few times, while it is freezing.

Serve with fresh raspberries! #NorthEastTasmania   #TinDTC   #localfood

Wow what an interesting stay we had during the recent June 2016 floods. The storm followed us in and the rain was relentless over several days. From the very comfortable, dry and warm Ah Back cottage we were perfectly located to watch the river break its banks from both sides of the cottage. While witnessing mother nature in this form first hand was an unexpected event, we were not at all alarmed. When road access on and off the property delayed our departure we were generously provided another night's accommodation along with additional supplies for the kitchen. Throughout, the hosts kept us well informed but at the same time were not invasive. We were particularly grateful to have been shown the micro hydro scheme immediately following our request on arrival and to tour the productive garden once the rain had subsided. We enjoyed wildlife at the door of our cabin and look forward to exploring the property more fully on our next visit. The 5 cottages are positioned high and dry, and while each is generally booked separately, collectively they are ideal for a large booking. We will definitely be returning.

Hi Julie We are so pleased that you weren't too inconvenienced by our small flood! BTW I have posted some photos on our Blog: tindragon.blogspot.com.au. If you don't mind, I will also post your review into this Blog (no names). I hope you are able to come back so we can show you some of the beautiful walks near our property and in our region. Than you for taking the time to write a review. Kind regards from Christine, Graham and James
