Do you need to follow cookbook and celeb chef's recipes to the nth degree? My favourite is Waitrose mag saying you need something like 'Red-tailed Colombian hens' eggs' in some of their recipes! Really!  But I do think Extra Virgin olive oil has more going for it than lighter pressings - think anti-oxidant phenols.
