Yesterday was #NationalWaffleDay .  We thought you may want a recipe for Belgium Waffles. 
Ingredients:
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
2 eggs, separated
1/2 cup oil
2 cups milk
Directions:
Sift the dry ingredients together in a large bowl. Separate the eggs. In small bowl, beat egg whites until stiff. Mix together the egg yolks, milk and oil and stir slightly. Add to dry ingredients and mix well. Fold in beaten egg whites. "These waffles are super crisp on the outside and light as a feather inside and so scrumptious! Avoid removing them from the waffle iron too soon; they should be a golden brown. Enjoy!" (The Bestest Belgium Waffles from food.com) #waffles   #belgiumwaffles

These large Victoria water lily pads, named after Queen Victoria of the United Kingdom, can be seen in one of the ponds at Houmas House Plantation, which was the site of the Louisiana Bed and Breakfast Association's July conference. The building is charming, warm and welcoming. The room we had was absolutely fabulous! It was very spacious, with comfortable beds and premium bedding. Breakfast was sensational! Good food and good conversation with other guests and the innkeepers! We will be back!

Great place. We rented out all the rooms for out of town guests and hosted a party for 40 people. Janice did an excellent job helping put it all together. We'd do it again and highly recommend this comfortable, nice B&B.

My new husband and I stayed in the Rex Room - cute, very roomy, and very accommodating! We had the Romance package A with hors d'oeurves and wine, dinner at Mansur's, and breakfast in bed. Other than the guest above us stomping every time they walked around, we couldn't have been more pleased!

I stayed one night with my family at the Stockade. The rooms are furnished tastefully. Janice and her staff are very welcoming. It's the place to be in Baton Rouge.

Our second stay at the Stockade this year was just as enjoyable as the first in the spring. It's in a convenient location, a wonderful sitting, the rooms are large, comfortable and clean, the bathrooms large, the breakfast delicious, and the company and conversation enjoyable. Preferring B&B's to hotels or motels, the Stockade is the model other B&B's should try to emulate! However, getting to Baton Rouge has become too much of a hassle from the west. The traffic crossing the bridge was one hour and viewing the traffic ahead from the summit, I exited to Highland Rd, the first exit after crossing the bridge. The drive to the stockade took us through LSU and lovely neighborhoods instead of creeping interminably along I-10.

Stayed 18 May 2015 for two nights. We were delighted to find this b&b. After a long journey, we arrived earlier than the 3pm check-in time and the friendly staff welcomed us in and offered drinks and snacks whilst we waited in the lounge for our room to be prepared. We stayed in the Welch Room and were amused to see that a step was required to climb onto the bed. The room was tastefully decorated and the bed was really comfortable. The lounge and dining areas were a pleasure to sit in, and breakfast was varied and plentiful. Complimentary cold drinks from the fridge were a nice touch. The restaurant opposite was an enjoyable experience, as was the Rural life museum and shopping malls a few miles away. Definately worth staying here if you're in the area.

Thanks so much for staying with us Andy! Glad you enjoyed the rice bed. These 4 post beds called rice beds got their name from the rice carving on the posts. They were primarily designed to allow for better air circulation during hot summers. Before air conditioning, beds were moved to the center of the room during hot weather for cooler sleep. Mosquito netting was also used if necessary. In winter, beds could be “dressed”—draped with a canopy above and bed skirts below—for warmth. Thankfully, we have air conditioning and central heating, so none of the moving around is required anymore. And the step to get up into the bed is for our guests’ convenience just so you don’t have to take a flying leap to get up there! Very much enjoyed my brief stay. A beautiful common room all decorated for Christmas and a well maintained exterior. Janice, the innkeeper, was there to greet me when I arrived and showed me to my room, The Escape. The room was huge, clean, and well lit. The bed was very comfortable and the linens were good quality. My only suggestion would be to update the bathroom. The bathroom decor is a little dated and the lighting is dim with no light in the shower. I was not able to stay for breakfast as I had to leave very early, but I will definitely be staying at the Stockade again on my next trip to Baton Rouge.

The Stockade was the most charming and gracious Bed and Breakfast we stayed in on our several day journey from Jackson Mississippi to New Orleans. We lived in Baton Rouge for 30 years before retirement and have children in the area. By far, the Stockade is the nicest place to stay in the entire area. Chet and Catherine Spokane, Washington
