Cookery School Cornwall – One and two day courses

Your tutors : Max Savage & Steve Marsh

Max Savage and Steve Marsh, Head Chef and General Manager Respectively, have over 35years of hospitality and catering experience under their belts you’re in very safe hands.

Max is our head chef here at the Llawnroc and as you will see has an in-depth knowledge into everything foodie. Max has worked in and around Cornwall, namely the Nare in Veryan, The Idle Rocks in St Mawes, and the watering hole in Perranporth. After a short stint in the big city, that’s London not Truro..! Max found his next Head Chef position in the Bel and Dragon in Windsor before joining the team in Jan 2015

Steve is the General Manager of the hotel, but don’t be fooled his home is firmly placed behind the stove, and has been cooking for over 15yrs, 10 of which holding two rosettes in various different establishments across the southwest. Steve moved down from Kent in 1998 prior to his move Steve worked under Mark Raffan at the renowned Gravetye Manor, East Grinstead. And the Mirabelle Restaurant, in Eastbourne to name but a few.

Our Cooking Courses

Our courses are designed to make your learning experience a pleasurable one. Our aim is to introduce you to our working kitchen and teach you the not so hidden secrets of our industry. We aim to tackle your fears of cooking and turn them into successes, and celebrate our enjoyment of cooking whilst passing on our knowledge to help you create some great dishes.

Topics we cover are:

Pastry | Butchery | Game | Fish | Foraging

Fish preparation and cooking, and the modern world of sustainable fishing.

We will cover a wide range of fish and shell fish preparation and cooking. Showing you the best methods of storing and preserving, to include:

Flat and Round fish preparation and filleting.
Know your produce, buying sensibly and sustainably
Cooking practices
Sauces, basic fish stocks and wholesome soups
Shellfish, mussels and clams
An Introduction to Bakery | Breads |Scones |Desserts

In this session we will be showing you best practice bakery techniques to help you produce some incredible results we will cover:

White and Brown Bread
Short Crust pasty
And a dessert of your choice from the following: Eton Mess – Sticky toffee Pudding – Chocolate Marquise
