INGREDIENTS
For the filling:
1 lb ground chicken
6-8oz button or baby bella mushrooms, finely minced
1 (8oz) can water chestnuts, drained and minced
2 green onions, sliced
2 tsp fresh ginger, minced
1 clove garlic, minced
1 Tbsp avocado oil

To serve:
Lettuce leaves
Cilantro
INSTRUCTIONS:
Prepare the filling by heating the oil in a medium sauté pan over medium heat. Add chicken and cook until lightly browned and cooked through.
Add mushrooms, water chestnuts, green onions, ginger, and garlic. Cook until fragrant and cooked through. Add additional sauce as desired. Scoop mixture onto lettuce leaves. Top with cilantro, if desired, and your favorite dipping sauce.

Ingredients:
1 green Plantain
1 tablespoon melted coconut oil
sea salt to taste
Directions:
Preheat the oven to 375 degrees. Line two large pans with parchment paper and set aside. Cut off the ends of each plantain. Cut a thin vertical slit down each plantain. Peel away the thick outer layer and discard. Cut each plantain into very thin slices. Toss the plantain slices in the melted coconut oil. Place the slices in a single layer on the baking pans and top with sea salt. Bake the plantain slices for approximately 15-20 minutes. Enjoy.
