Our calling is to create beers with character and depth using the simplest and purest of means. We do not filter or pasteurize our beers. The majority of our bottled beers gain carbonation through 100% bottle conditioning, allowing carbonation to naturally occur through a secondary bottle fermentation. We strive to use unconventional ingredients, and we will proudly state what we put in our beers.


We are inspired by those in the brewing community who are pushing the limits of what 'beer' is. We wouldn't be here if it weren't for great brewers who came before us. We aspire to be an influential force in craft brewing.

Great experience on my first visit out! It was a little crowded, but that was to be expected seeing as how it was the night before Thanksgiving. Awesome selection of tasty beers and very knowledgeable staff. The growler price was phenomenal and it's pretty damn nice looking. I would always come visit here when I am in town. Keep up the good brewing guys and gals!!

One of my favorite breweries. I like how small and intimate the setting is. I also like the variety and flavors of beers they have...they specialize in tart beers and they do a great job at it. I really like the fact that they allow customers to bring in their own food (as they do not provide any food), and sometimes food trucks will come as well. One day I hope to become a member and get all the exclusive beers :)

Great tasting room experience. They do not serve food, but you can bring food in, and there's usually a couple of food trucks in the parking lot. Great variety of brews, the very knowledgable brew masters circulate through the tasting room and talk to you abuot what you are tasting and make suggestions. Great place.

Great selection of barrel-aged beers. Friendly staff. Expect to be standing because the place gets packed. They have different food trucks come in. If you're picky with beer-food pairings, bring your own food :-)

The Bruery rapes me all the time. Bone dry. They have so many good beers, but they charge a premium. If you want the exclusive beers like Grey Monday and Black Tuesday, you have to be in their club. That is, if you can get in. They have a crapload of beers. For me to list all of them would be insane. They have regular beers, seasonal beers, collaboration beers (one with Bottle Logic soon) , beers in oak barrels, beers in whiskey barrels, special collection, seasonal collection, reserve member beers....and more! Next thing you know, they will have mini bottles and magnum bottles. For easy drinking try the Loakal Red For you sours fans try Sours in the Rye If you are a Reserve Society member (you shouldn't be reading this): Try Chocolate Rain, better than Black Tuesday IMO. There's so much selection and exclusions here, it does get quite confusing even for an almost everyday beer drinker like me. So you can always get a flight of tasters if you are new year. They have different selections with that as well. You can make your own or select from the set they have. Usually all around $10 range. What I can tell you from my experience here is that the tasting room is quite nice. It gets crowded very quick. There are no food. They have food trucks from time to time (Yes, visit my buddy at A Bite Truck there usually on Sundays). The bathrooms are clean (Yes 1 for men and 1 for women). Thumbs up for that ! So come early, score a table, make some friends. I love this place and I've been trying to get a job here part time but no avail. Maybe I'll just be volunteer at one of their events again because I had a great time meeting folks and enjoying their beers.

The Bruery is the top brewery in Orange County. Originally a buddy of mine introduced me to this place because he is a big craft beer connoisseur. It's located off the 57 freeway on Dunn Way. Parking generally isn't an issue because this an open lot with plenty of spaces available. Although, it tends to get quite busy on Saturday's, but luckily my most recent visit was yesterday late in the afternoon. The atmosphere is interesting and fun. There is plenty of seating; high chairs with tables, along the bar, etc. Even if you do not get a seat, a small corner or sharing a barrel with your neighbor is just fine. The menu is simple, located on the left side of the bar on a chalk board or take the paper list at the front. I do not have a well-verse palate like my friends, but I am getting there. My favorite are the "sours" -- Sour on the Rye, Tart Darkness, Oude Tart, Berazzled etc. The Bruery has a little something for everyone, regardless of your palate. The service is exceptional, with the servers allowing a tasters before ordering or purchasing take home bottles/growlers. They do not offer food but there is always a food truck outside ready to your orders or feel free and bring your food. I highly recommend this brewery!

Wow! I did nothing but sample and the beers are amazing.... it's a nice move away from super hoppy IPAs
