Seared Berkshire Pork Loin Chop & Mash

Roasted Carrots/Parsnips/Green Beans, Preserved Lemon/Italian Parsley Relish

Still cold and snowing, thoughts turn to mashed potatoes. One of my top 10 comfort foods, with or without gravy.

Roasted veg, 425F for 30 ish minutes, toss with olive oil, salt & pepper. The relish, leftover from the other night, still a fantastic hit of flavour.

Yes I got a great sear on the loin chop, heated the pan well, not extra oil, let it sizzle.

I even have mash leftover and a chop to sear tonight. I'll do a quick look through my fridge and see what needs to be used up before my trip to the farmers market tomorrow morning.
