Tangelo Ras El Hanout Roasted Vegetable

Oh that oven roasting that leaves you free to accomplish other things or just read a book.

Seared chicken thigh, on the bone, seared skin side down and finished on top of the roasting vegetables. Bell pepper/onion/flat beans, all fresh from the farmers market. The tangelo's for that sweet orange bite.

I started the veg in the oven after tossing it with Ras el Hanout and olive oil/s&p, 425F oven. I did this while the chicken thighs seared, just dropped the thighs on top of the veg and let them finish in the oven.

I have some recipes for other middle eastern spice mixtures, I'm going to have to explore them more because Ras el Hanout is so dam delish!!!
