Fancy having a go at a simple but pretty nice cake? Quick'n'easy. It comes out (or at least it did for us!) like a chocolate cake in the style of the sponge of a Black Forest Gateau.

1 1/2 cups of Self Raising Flour
2 tablespoons of Cocoa
1 teaspoon of Bicarbonate of Soda
1 cup of Sugar.
1/2 tablespoon of Vinegar
1 cup of Hot Water
5 ounces of Butter, melted

Mix all the dry ingredients together, then add the butter, vinegar and water and mix it up well. It will bubble and froth.
Put the mixture in a greased tin - approximately 10 x 8 inch and bake for 40 minutes at 190C. 180C if you have a fan oven.

This recipe is quite adaptable. Use part Self Raising Wholemeal Flour, add Nuts or Fruit. You can ice it with Orange Flavoured Icing or even Cream Cheese Icing if you like. Whatever takes your fancy. Enjoy :-)
