SLOW COOKER TORTILLA SOUP
This week I've been sharing all the recipes you can make using my wonderful Homemade Chicken Broth recipe. This one is probably my favorite. (Kind of like I tell each of my kids THEY are my favorite. But, it's true. One is my favorite daughter. The other is my favorite son.) Anyway, this WONDERFUL soup is PERFECT for fall. (Fall Is coming, right? Even though it's going to be in the 90's again, here in the Mid-South?) To me, the smoky flavor of the chipotle pepper in adobo puts it over the top.

Slow Cooker Tortilla Soup is a delicious soup that you can make in your slow cooker, flavored with smoky chipotle peppers. Ladle over tortilla chips.

It's about that time, when all my gardening friends are paying their friends, to take the zucchini they grew in their garden. off of their hands! How To Make Homemade Chicken stock: It's almost officially soup season, and when fall is here, and we find ourselves longing for a comforting bowl of soup, the one ingredient you find in most soup recipes is chicken stock. Sure, you can buy the stuff in a can, or go one better and buy the stuff in a box, but why not go one teency, frugal step further, and take 5 minutes to throw together something that simmers on your stovetop for a few hours, and makes your kitchen smell like heaven, and your soup taste like the food of the gods? I thought that I maybe needed a better name for this than Basil Pine Nut Pesto, so I went with Easy Basil Pine Nut Pesto, because who doesn't like Easy? Ever thought to #GrillPorkLikeASteak? I took a challenge from Smithfield to grill their All Natural Bone-In Pork Chops like a steak, and decided to grill my Romaine lettuce, too, while I was at it! I added a vinaigrette that is very similar to the one that used to be the standby at one of my favorite back-in-the-day lunch spots in Nashville, The Corner Market. It's a Toasted Sesame Vinaigrette. (The "toasted" comes from using toasted sesame oil.) This is ridiculously delicious for the amount of time and effort you put in! Grill the pork like a steak, grill the romaine briefly, add some fresh veggies, and the delicious vinaigrette, and you've got dinner in a flash, perfect for your family, or entertaining.
