For the first day of spring what could be better than I Springtime Fresh Strawberry Pie. This is not just jello and strawberries. I use a technique I learned from the Cook's Illustrated Recipe, plus my mother's pie crust. Mom was famous for her pies, and I've won all kinds of contests using what I learned from watching her. Flakiest pie crust, freshest and fullest strawberry flavor: this pie is a winner for sure! Just needs a touch of fresh whipped cream to top it off!

I have an #appetizer #recipe for you that is perfect for #Thanksgiving, because you can make it ahead! My husband calls it "crack", but I call it caponata. It's savory, sweet, smooth, crunchy, and spicy, all at the same time. I serve it on a tray of baguette slices, toasted in olive oil, salt and pepper. It has eggplant, onions, yellow and red peppers, zucchini, fennel, tomato paste, red wine vinegar, crushed red pepper flakes, toasted pine nuts, capers, and a chiffonade of mint. It is divine!
