, because you can make it ahead! My husband calls it "crack", but I call it caponata
. It's savory, sweet, smooth, crunchy, and spicy, all at the same time. I serve it on a tray of baguette slices, toasted in olive oil, salt and pepper. It has eggplant, onions, yellow and red peppers, zucchini, fennel, tomato paste, red wine vinegar, crushed red pepper flakes, toasted pine nuts, capers, and a chiffonade of mint. It is divine!
