Two Michelin star chef Valeria Piccini of Caino Ristorante in Montemerano, Italy held a Masterclass at George Brown a few weeks ago.

#AtThePass is a new monthly series showcasing Toronto’s best chefs.

You won’t find any celebrity chefs featured here. Perhaps you already know these fine cooks, but maybe not. They’re not famous - yet. But it’s time these talented, passionate, hard-working chefs got a bit of the spotlight.

Up this month: Chef Aiko Uchigoshi of Miku Toronto.

Her exemplary made-from-scratch, seasonal confections masterfully combine Japanese and European flavours. Case in point: Green Tea Opera Cake with green tea génoise, matcha butter cream, dark chocolate ganache, adzuki bean cream, hazelnut wafer, and matcha ice cream.
