Thank u guys for your response. I am in the process of buying a Weber charcoal lighter in order to avoid all these problems. I will always make sure the charcoal I use is completely lit before using for the first time or to add during cooking. Again thanks much for your reply.

Have a question about sanitation here. I thought we are not supposed to add raw unlit charcoal to the BBQ due to the carbon monoxide coming off. That's why we have the charcoal lighter in order to add already lit charcoal to existing ones. Please give me your thoughts on this.

We used natural lump charcoal here, so it doesn't have any of those nasty lighter fluid chemicals like quick light ones do.  Yes there will be carbon monoxide, but I have never worried about adding natural lump during a cook.  If you have a kamado style cooker with ceramics just make sure not to use any lighter fluid or quick light charcoal as the flavor will stick to the ceramics.  You can totally pre light the charcoal before you add it, if you want to.

Introduction
Born in Cairo, Egypt, to Greek parents. B.Sc. in Chemistry & Physics from the American University in Cairo. Worked for IMCO Service, a division of Halliburton company from 1971 to 1987 as a mud engineer and Logistics Manager for its operations in the North Sea, Sweden, Italy, Dubai, Ghana, Ivory Coast, Gabon, Angola, Tunisia, Egypt and Kavala Greece, Prinos Oil and Gas field..Moved to Athens, Greece in 1987 where I established my own commission agency to supply Greece with drilling chemicals, plastics and other raw materials.  Closed down operations in 2010 due to the Greek Financial Crisis.
