This is an addition or rather a correction to suit Greece where Chervil  and Shallots cannot be found.
You will need for one batch of 250 ml. of Sauce Béarnaise: - 3 shallots very finely chopped. - 50 ml vinegar. - 30 ml white wine. - 3 Tbsp. finely chopped tarragon, estragon in French. - 2 Tbsp. finely chopped chervil, cerfeuil in French. - 2 pinches of white pepper. - Pinch of salt.

Introduction
Born in Cairo, Egypt, to Greek parents. B.Sc. in Chemistry & Physics from the American University in Cairo. Worked for IMCO Service, a division of Halliburton company from 1971 to 1987 as a mud engineer and Logistics Manager for its operations in the North Sea, Sweden, Italy, Dubai, Ghana, Ivory Coast, Gabon, Angola, Tunisia, Egypt and Kavala Greece, Prinos Oil and Gas field..Moved to Athens, Greece in 1987 where I established my own commission agency to supply Greece with drilling chemicals, plastics and other raw materials.  Closed down operations in 2010 due to the Greek Financial Crisis.
