Low Carb Protein Pancakes - I make a lot of pancakes and am constantly experimenting with ways to add more protein so that I am not starving an hour after eating. Lately cottage cheese has been one of my favorite secret weapons to boost the protein in my favorite pancake recipes. Don't worry, you can't taste it at all. It adds a creaminess and richness to the pancake plus lots of good, lean protein. Consider adding your favorite fruit, spices, or nuts to the basic batter to make things more...

Healthy Meal Plans Week 6 - “If you fail to plan, you are planning to fail.” Every week I like to share highlights form the Slender Kitchen meal plans. I believe meal planning is critical to any long term and effective healthy living or weight loss goals. For me it was the single thing that finally made permanent weight loss achievable. The quote stood true, when I failed to plan, I failed, and I don’t want that to happen to others. Additionally, I believe that meal planning is a skill that...

Baked Skinny Fries (Made with Potatoes and Turnips!) - Although I have never been one to discriminate against a french fry of any kind, I will always prefer the skinny, crispy fry to the wedge or steak fry. In fact I often search out the almost burnt, smallest fries in the bunch. I think it's because they contain the most crunch and salt per bite, but that's just my theory. The real secret to keeping these fries low in calories is making a quick swap that no one will notice.  We are going t...

Celery Ranch Slaw - Yesterday I shared this quick and easy Buffalo Chicken Sloppy Joes recipe and today I wanted to share the celery ranch slaw that I make as the perfect side or sandwich topping. It's crunchy, crispy, and the homemade ranch dressing tames the spice of the buffalo chicken making it a winning combo. It's also great on its own as a salad or side dish, and I envision myself making it a lot this summer when the warm weather comes back. Calories 105, Total Fat 4g, Total Carbohyd...

Friday Five: Low Sugar (and SmartPoints) Dessert Ideas - One thing I have been hearing a lot lately is that it is tricky to find desserts that are low in sugar and therefore low in SmartPoints™. Since the new plan assigns a much higher SmartPoints™ values to anything high in sugar, many people (myself included!) have found that their favorite sweet treats now are too high in points with the new plan. However with some searching, there are some good lower sugar options that can satisfy your ...

Chocolate Oat Smoothie - So I am going to be honest. I am not the biggest smoothie person, especially in the morning. I think most of it stems from my need to eat volume, which smoothies normally just don't have. However I do realize that sometimes smoothies are a terrific option for a quick breakfast or meal on the go, which we all need sometimes. This smoothie incorporates oats to give it more staying power with banana, yogurt, almond milk, and chocolate. It will keep you full all morning...

Soy and Mango Vinegar Marinated Chicken Thighs with Sugar Snap Peas
Today's post is brought to you by Nakano Rice Vinegar but all opinions are 100% mine. This is one of those recipes that will quickly become a staple. We have eaten it three times since I first made it and given that there are only 5 minutes of hands on prep, it's easy enough for almost any night. Plus the leftovers are delicious in salads, lettuce wraps, and Asian inspired tacos. Did I mention it all cooks in one dish, you can use almost any v...

Healthy Meal Plans Week 5: Creating a Breakfast Routine - Meal planning is one of the best ways to make your life easier and make dinner time stress free! It's also critical to success for almost any healthy eating or diet goals. Knowing what you are going to eat ensures that you don't end up running to the vending machine, calling for take-out, or making unhealthy choices when you are too hungry to think. This week I wanted to take a minute to talk about creating a breakfast routine. As so...

Buffalo Chicken Sloppy Joes - Over the weekend there was a lot of football watching and wing eating going on in these parts. But having vowed to stay away from fried foods for the month of January, I knew I needed a yummy alternative for when the wings showed up so I decided to make these delicious and incredibly simple Buffalo Chicken Sloppy Joes. The recipe really couldn't be easier - ground chicken, carrots, celery, buffalo sauce, and some spices - but stuffed into a sandwich with some r...

Healthy Meal Plans Week 4: Mixing Up Your Side Dishes - Lately I have been getting lots of emails about how to mix up side dishes when meal planning. As we continue to focus on healthy eating in the new year, coming up with side dishes can get tricky. We can all only eat plain brown rice and broccoli so many times. So here are some of my favorite ways to mix up your side dishes. What are yours? Roasted vegetables: Next time you head to the grocery store, reach for a new veggie and try roast...
