A couple of weeks ago, my friend Maria posted her improvised Peking Duck meal, which, if I recall, was some roast duck or chicken bought at the Chinese to-go, wrapped up in some King's Hawaiian rolls with some green onion, cilantro, and Hoisin sauce. And I thought that was a brilliant idea - one that inspired this meal of:

- Roast Hoisin Chicken using this recipe:
- homemade mayo
- some very thinly sliced cucumbers dressed with salt, sugar, garlic, green onions, white vinegar, and a little oil
- fresh green onions and cilantro, and
- a drizzle of sriracha

on a soft, sweet, squishy King's Hawaiian roll.

After I took the roast chicken out of the oven, I set the chicken aside and added 3 Tablespoons of strawberry jam, and another couple of Tablespoons of Hoisin sauce to the pan sauce to make some extra sauce to mimic that general plum sauce flavor.

And we washed that down with a little Sauvignon Blanc-Verdejo, which was extra crisp and fruity with this particular meal. :)

This one's definitely a repeat. I think the kids will totally gobble it up!
