Found this recipe I saved from the magazine a while and made it for dinner again last night.. I like this version because it much no and is not in soupy heavy cream based sauce.. Shrimp with broccoli and Angel hair pasta in garlic butter sauce. Cheese is optional.

Ingredients

8 ounces uncooked angel hair pasta
1-1/2 pounds uncooked large shrimp, peeled and deveined
5 teaspoons canola oil, divided
1 bunch broccoli, cut into florets
4 garlic cloves, thinly sliced
6 tablespoons butter, cubed
6 tablespoons white wine or chicken broth
2 tablespoons grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper

Yield: 6 servings.

Directions

Cook pasta according to package directions. Meanwhile, in a large skillet or wok, stir-fry shrimp in 3 teaspoons oil for 1-2 minutes or until shrimp turn pink. Remove with a slotted spoon and keep warm.
Stir-fry broccoli in remaining oil for 3 minutes. Add garlic; stir-fry 2 minutes longer or until vegetables are crisp-tender.
Add the butter, wine, cheese, salt and pepper. Drain pasta; add to skillet. Stir in shrimp; heat through.

Sometimes you just want a nice fresh salad .. It's also good during the week for lunch, refrigerates well and goes with all kinds grilled barbecue meats and sandwiches on the side. Have a nice weekend!

Chic pea and roasted red pepper and onion salad
Serves 2

1 15 oz can chickpeas, drained and rinsed
4 marinated roasted red pepper slices, chopped
Use liquid for dressing. 2 tbsp worth.
1 tbsp dried Chervil
1 tbsp dried parsley,
1 sliced small white or red onion


Instructions

Combine all ingredients in a bowl and mix well. Adjust seasoning and liquid if necessary.

Really good side any time of the year..

Recently at the supermarket i was searching for new vegetable to work with came across frozen Fava beans.. Bought the bag and took and chance and they are wonderful. Fava are flavorful and fabulous if you have the patience to deal with them! Fava Beans are also known by an amazing variety of other names: Broad Beans, Windsor Beans, Horse Beans and even Pigeon Beans. By any name, i found out Fava Beans are among the all-time great culinary vegetables. I did my online research on how to prepare them and made this wonderful combination and side dish .. ! Leave out the bacon and it becomes vegetarian.

Beans and Bacon side dish!

services 1-2

1/2 cup shelled fava beans
1/2 cup cooked peas
1 small onion, finely diced
2-4 tbsp of chopped pancetta or bacon raw
1 tbsp extra virgin olive oil
1/2 tsp sweet paprika
1 pinch fine sea salt

Bring a pan of water to the boil. Drop in the frozen fava beans, bring back to the boil and cook for 2-4 minutes. Drain, then pop the fava beans out of their skins, leaving any tender small ones unpeeled.

Heat the olive oil in a paella pan or shallow flameproof casserole dish over a medium heat. Add the onion, and sweat for 8–10 minutes, making sure it doesn't catch but sweats until golden and completely soft. Add the bacon and continue to fry for 1-2 minutes until lightly coloured.

Pour the peas and fava beans into the pan and stir to combine, then add the sweet paprika stirring to coat it with the spice and onion mix.

January is also National Soup Month, and what better meal to warm your belly than a hearty bowl of soup ?

I decided to do a spin on a Shrimp Bisque by Ina Garden. Her dish is fantastic the way it is, but I wanted to make quick lighter and healthier version with less ingredients but still packs a lot of flavor .

This is an easy to prepare soup with lots of flavor. It doesn't need any fancy presentation. Simply ladle it into big bowls and serve with crusty bread Yum! . I love mine because it so much lighter.

Shrimp Bisque with Cherry tomatoes and Spices
Serves 1 person.. For more people just multiply it!

1/4 pound large white frozen shrimp, peeled and shells removed. approx 8-10 shrimp.
1 cup of water
1/4 cup tomato puree, plain
1 cup of cherry tomatoes sliced
1 tablespoons good olive oil
1 tablespoon chopped garlic (3 cloves)
2 tablespoons of Sweet Paprika
2 tablespoons of Za'atar (green version)
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 teaspoons dried Chervil
2 teaspoons dried Parsley
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon of half-and-half

Directions
Saute Garlic and oil,
Add Cherry tomatoes and all spices, saute until tomatoes breakdown,
Add water and tomato puree
Add Shimp to cook in the liquid

**Optional - for creamer texture add half-and-half at the end with flame off.

Serve hot with crusty bread!
