Why get 4K when eventually there'll be 8K?

Probably because most people could not see the difference between 4k and 8k unless the screen is large enough to be the price of a house. ;). 
 
It's a feature bloat reminiscent of PC industry in the 90s. Eventually the TV manufacturers will realize that at some point users don't care that much more about the specs, but really want ease-of-use. We are not at that point yet though.
