This morning started as others have for the past few months, with 20 minutes of meditation. It’s made a huge difference in my stress and anxiety levels, my blood pressure, and my attitude. Friends comment that my energy is more relaxed. Most importantly, it’s been months since I experienced a-fib, or atrial fibrillation, with my heart. To say that a daily meditation practice has helped me is an understatement. Its been life-saving

Bursting with flavor and health, this salad is crisp, crunchy and cool. Pack it for a picnic at the beach, park, lake or for lunch at work or school. It transports easily. Lentils and quinoa add protein, vegetables, crunch, feta for a nice tang, and herbs for a fresh garden lift. We will be eating this Mediterranean lentil quinoa salad a lot in the coming months.

A strawberry banana smoothie is a much-loved classic. In my continued attempts to add more vegetables to my diet, I swapped out frozen riced cauliflower for ice cubes. It was great! So here is my update to the usual strawberry banana smoothie – adding frozen cauliflower.

An Emerald Isle tradition, colcannon is a combination of mashed potatoes mixed with either cooked cabbage or kale. For a healthier, lower-carb version, I’ve swapped out potatoes for cauliflower in this no-guilt cauliflower colcannon for St. Patricks Day. It’s a great way to get your veggies any day of the year.
