Bayou City Chili
By Rhonda Morrison
I’m one hot momma who puts her spice in her chili. I have three hearty boys that love my nightly cookin’. Everywhere from karaoke to my channel on YouTube, I spread joy and celebration. Over the past year I have developed an addiction to making videos for cooking contests and that is how I developed my chili recipe! It won in a neighborhood contest and got me Houston Texans tickets!
When I think of chili, I think of it as a regional or cultural food. There really is no wrong chili. It can be vegetarian, green, red, chicken… a person’s chili says a lot about what they love, prize, and appreciate. So being a Cajun from Louisiana married to a red-head from San Antonio, I brought all the flavors that I prize in a chili together and named it after the city where we met. My chili features flavors that I discovered after moving to colorful and savory Houston. A golden wheat beer is the sweet to my heat in this Texas chili. My chili has a kick but it also has a comforting quality. The Texas beef saturated in warm flavors with its meaty manly texture can almost make you forget that your team is losing! Dress it up or eat it bare. It’s all good!!! I am passionate about food. I am passionate about my chili. I believe that I am so passionate because I cook with love. I have to. I’m gonna feed it to my family!
