Stuffed mushrooms with sweet potato and crispy jamón - delicioso!!!

Great recipe for Stuffed mushrooms with sweet potato and crispy Iberian ham. I had a bag of mushrooms I neede to use up yesterday so decided to have a go at stuffing them. The mixture of ingredients I used worked so well that I'll definitely make them again - ideally with larger mushrooms so preparation isn't so fiddly. I used jamón ibérico but you can substitute with prosciutto or bacon. Hope you like it ☺

Hice esta deliciosa, rápida y fácil pastel de pescado este fin de semana. Muy recomendable porque sale super cremoso y sin embargo no hay que hacer ninguna salsa y tampoco bechamel. Espero que os guste :-)

Fabulosa receta para Pastel cremoso y super fácil de merluza. Una receta deliciosa que adapté de una receta de mi hermana. Usé merluza, pero cualquier pescado vale. La salsa cremosa se obtiene al ponerle yogur y queso antes de introducir al horno, y las migas de pan tostadas le dan un toque crujiente - super fácil y super sabroso. Espero que os guste :-)

Crumble is a great Sunday lunch desert. And so easy to make. Here's my recipe. #happysunday
Great recipe for Apple Crumble. Fruit crumble is a great way to use up fruit that has seen better days. It works nice with any fruit (except, in my opinion, bananas) and you can also mix different types - adding a handful of frozen raspberries or blueberries gives it an extra zing, and plums work really well too. Preparation time is under 10 minutes, and the oven does the rest. Serve with custard, vanilla ice-cream, cream or natural yoghurt.

A great way to use up stale bread and the lime gives the fillets extra zing. 
Great recipe for Crispy chicken fillets with lime. My sons love breaded chicken so I often experiment with different flavours - ginger, cumin, basil.... Today I tried with lime. I added the zest of one lime, but next time will double the amount to stress the added flavour.

Easy Monday evening food with omega 3 to give a boost to the first day of the week :-) 
Great recipe for Salmon fish cakes with roasted sweet potato and lime. Fish cakes are a great way to use up fish leftovers. I had some.roasted salmon leftovers in the fridge and decided to make fish cakes but with sweet potatoes because I didn't have any regular potatoes. Great recipe for Spicy and crunchy roasted pepper and garlic hummus. Made this delicious hummus last night. I roasted the peppers and garlic before going to work in the morning so it only took about 10 minutes to prepare in the evening. We ate it slightly warm spread with warm toast and a salad, but it would also be perfect served with grilled fish, as stuffing for jacket potatoes, or cold as a dip with crudités. Fish pie made easy for a Tuesday treat. I tried this recipe the other day, but used frozen fish (no fresh on hand), smoked salmon and Greek yoghurt (no creme fraiche either) and it was sooo delicious too. And so quick!! Highly recommendable for a Winter evening meal. #happytuesdayeating
Great recipe for Creamy Fish Gratin. This changes the whole concept of fish pie from a hearty meal that needs an hour or two to prepare, to a light and creamy dish that takes less than half an hour. Always a good choice for today - ropa vieja to use the leftovers from Sunday. Here's my recipe :-)

Great recipe for Ropa vieja (chicken leftovers recipe). Ropa vieja means "old clothes" in Spanish and it is a delicious way of using up leftovers from a Sunday roast. I used roast chicken and veg, but pork, lamb and beef all work too. If you do ropa vieja with pork, try adding a grated apple to the onion. And if you use lamb, use fresh mint or rosemary. My Mum has all the credit for these quick roast potatoes. They take much less time than normal roasts, but taste just as delicious. And less fatty too. Enjoy!!

Introduction

I was born in England but have lived in Spain for over half of my life now, having originally come in 1988 to spend a gap year between finishing my degree and starting work. So I suppose you could say I am by now probably Spanglish - Spanish resident with a British passport. Both countries and cultures are important to me and love popping over for family visits on cheap low-season flights when we can (thank you Easyjet and Ryanair!!!).

The past 15 years of my professional life have centred around the Internet industry. In 2000 I co-founded a family Internet start-up business, ItyIs Siglo XXI which grew to become one of Spain’s biggest  Internet content groups in terms of visitor numbers, with various sites, niche social networks and apps including the lifestyle Internet portal site, euroresidentes.com and the largest Spanish-speaking recipe social network, Mis Recetas (now Cookpad Recetas)

At the beginning of this year Mis Recetas was acquired by Cookpad Spain, affiliate of the Japanese company Cookpad, and I am now Ceo of Cookpad Spain. The slogan of Cookpad is “Make everyday cooking fun!” and Mis Recetas “El gusto de cocinar” and since I absolutely love anything to do with food and intercultural integration, I am delighted to have a role in the global Cookpad family.

I'm generally a listener rather than a preacher (although I'm sure my family would disagree!!) , so feel much more comfortable on Google+ than other social networks like Twitter and Facebook. My circles reflect my interests - Food and cooking, Internet, Cyberwomen, Google, Graphic Design, Silicon Valley news, Geeks, Tech journalists, Music, Travel, Art and Photography. I enjoy learning from the content published by all the people in them and am amazed by and grateful for the variety and quality of the posts.
